
Sushi Art, the UAE’s leading premium casual sushi brand, proudly announces its latest culinary collaboration with Michelin-starred Chef Gregoire Berger. Launching on April 15, 2025, the exclusive Omakase menu, priced at AED 159, will be available across all Sushi Art locations in Dubai and Abu Dhabi.
The collaboration marks a new chapter in Sushi Art’s tradition of working with world-renowned chefs, with a focus this year on deep local roots. Chef Gregoire, a loyal guest of Sushi Art’s JBR branch for over a decade, brings his creative vision and Michelin-star expertise to a menu that celebrates flavour and storytelling.
Rooted in the Japanese dining tradition of Omakase, meaning ‘I leave it up to you,’ this menu invites guests to entrust the chef’s expertise in crafting a personalized, multi-course journey of flavours. Chef Gregoire has curated an eight-course experience, with each dish reflecting his signature approach – blending refined technique with emotional storytelling and bold, layered profiles.
The experience begins with the Black Sesame Dynamite Shrimp, a bold take on a classic and a nod to Chef Gregoire’s favourite colour, black. Served tableside, the shrimp is coated in charcoal-infused tempura batter, topped with umeboshi-pink sesame, and presented atop a bed of crispy black noodles for a theatrical start. Following this, the Nashi Pear & Cabbage Coleslaw Spring Roll pairs crisp Asian pear with tangy cabbage, sprinkled with crunchy peanut butter balls and drizzled with honey. The dish draws inspiration from Sushi Art’s cabbage salad, often enjoyed by the chef’s daughter, made more personal with the addition of peanut butter – an ingredient she loves.
The journey continues with a bite of the unexpected Crispy Shiso Tacos with Salmon & Kalamansi. Delicate shiso leaves are lightly fried to a crisp, creating the perfect base for the silky salmon. The dish is elevated with bright, zesty notes of Kalamansi, a citrus hybrid from the Philippines known for its refreshing sourness. Next, the Obsiblue Roll with Blue Rice & Tom Kha, which combines rare and naturally blue Obsiblue prawn with blue spirulina-infused rice and creamy coconut-based tom kha, evoking the essence of the sea. The Tuna Nigiri with Kimchi No Moto channels the warmth of Eastern flavours in a three-step tasting experience, featuring kimchi, a specialty sauce, and a finishing powder – all brought together in one bold, harmonious bite. Rich and indulgent, the Torched Wagyu Nigiri with Cherry BBQ Sauce brings together flame-kissed wagyu, marinated cherries, and black pepper for a smoky, playful bite with hints of fire and spice.
To conclude the meal on a high note, the Matcha Ganache Mochi with Black Tea Crumble & Milk Yuzu Lemongrass Sauce takes guests back to memories, capturing the stillness of tea rituals in every bite. The Chocolate Tart with Vanilla & Buckwheat offers a sophisticated finale to the Omakase experience, with nutty, caramelized depth and a hint of koji for added complexity.
